I officially declare the second day of this year (2011) RANDOM SANTA CLAUS DAY!!! MUAHAHAHAHA. The all caps are supposed to be epic echoing announcer guy voice btw. Yes, today’s posts will include 3 random Santa Claus images.
Why? Oh, no reason.

Just finished looking into where I could get some of these. Evidently an online store based in the US used to sell them but sold out in a matter of weeks. The only places you can get them now are sketchy overseas sites. I just ordered one… fingers are crossed that I get something like this picture, lol.

As mentioned in a previous post, I am a big fan of MC Escher and tributes to his work. One of his most famous works is titled relativity and it shows an impossible scene of multiple surfaces being the ground where gravity pulls the occupants:

The other day I stumbled upon this amazing image that pays tribute to Escher with LEGOS! It was made by Andrew Lipson and Daniel Shiu. You can read more about the project at Andrews website.

The craziest thing is how they made it! The lego creation extends in lots of directions, needed a lot of support and involved some really creative lighting.

I’ll admit, when I first started this blog, I was unsure as to how much traffic I would get and nervous it would not catch on, but I went ahead and went for it.

I wanted to show everybody all my favorite things on the internet.

And the response was pretty great! Traffic to the blog has been steadily increasing, so I’m just going to go ahead and keep it up. You, my visitors make me feel like I can fly!

You guys just keep on doing what you’re doing too. Keep on coming back to visit and (hopefully) sharing this awesome sites with people in your life. If we both keep it up, who knows what heights we can reach?

I hope you have all had a great year in 2010!

Things you didn't know about sleep
A fresh cheese with a slightly sweet flavor, ricotta is produced from whey drained off while making other cheeses, such as mozzarella and provolone. It lends a delicate texture to these melt-in-your-mouth pancakes. Serve with raspberry sauce, if desired (see related recipe at left).

In a large bowl, whisk together the ricotta, milk, egg yolks, sugar, lemon zest and juice until smooth. Sift together the flour, baking powder and 1/8 tsp. of the salt over the ricotta mixture and stir with a wooden spoon until just combined.
In another large bowl, using a whisk, beat the egg whites until frothy. Add the remaining 1/8 tsp. salt and continue beating until soft peaks form. Using a rubber spatula, fold one-third of the egg whites into the ricotta mixture, then gently fold in the remaining whites.
Preheat a griddle over medium heat. Spray the griddle with nonstick cooking spray. Ladle 1/3 cup batter onto the griddle for each pancake. Cook until bubbles form on top and the pancakes are golden underneath, 1 to 2 minutes. Flip the pancakes and cook for 1 minute more. Transfer to a warmed plate. Repeat with the remaining batter. Makes 12 to 14 (small) pancakes.
